georgian green beans with herbed yoghurt

Here’s something you could make instead of brussels sprouts on Sunday! It’s from Feast by Nigella Lawson, as part of a Georgian dinner party theme. Serve it with a chicken stuffed with rice and dates, sour cherries or sultanas.
Now I’m off to dig out that recipe for ham in cherry coke…
Georgian Green Beans with Herbed Yoghurt
1kg green beans, trimmed and cut into halves or thirds
120g butter
2 large sweet onions, finely chopped
1/2 teaspoon ground cinnamon
pinch ground cloves
good grinding of black pepper
50g butter
1 cup Greek yogurt
1/4 cup cold water
1/2 teaspoon salt
1 clove garlic, finely chopped
Handful of torn coriander, parsley, dill
Fresh mint
Parboil the beans for five minutes.
Melt the butter and add the onions, cinnamon and clove until soft. Add the beans and cover, and cook for 10-15 minutes.
Meanwhile, mix the yoghurt, water, salt and garlic in a jug.
When the beans are doen, stir through the coriander, parsely and dill.
Sprinkle with the mint, and serve with the yoghurt.
